Portobella, field mushroom, open cap mushroom are some of the common names. Mushrooms are 90% water and virtually calorie-free. They are also rich in potassium, selenium, protein, and cancer-preventing antioxidants. Dense, rich portobellos lend depth to sauces and pasta and make a great meat substitute. When portobellos are young and small, they're called criminis. If you want a bun-substitute, you can even use the mushroom's flat cap.
